Pumpkin Pie Popsicles sweetened with dates and spiced with fresh ginger


Check out these date sweetened pumpkin spiced popsicles! Your kids will beg for them as an after school fall snack. Seriously, my kids love these! I’m such a lazy cook these days and with the November weather in the 80’s I haven’t really turned on the oven – yet all I can think about is pumpkin. If you have not heard already, dates are a great sweetener for kids because they contain tryptophan (a large amino that converts to serotonin in the brain) Serotonin makes us feel clam and relax and eases depression. Also, the spices and fresh ginger in this recipe makes these great for digestion, inflammation and curbing appetite. Besides the fact that these Pumpkin Pie Popsicles are  filled with wholesome ingredients they are also unbelievably delicious and a batch whips up in just minutes.

  • 8 pitted dates
  • 1 cup of hot water
  • 1 cup canned pumpkin
  • 1 cup of heavy cream or full fat coconut milk
  • 1 tsp. vanilla
  • ¼ tsp cinnamon
  • ¼ tsp pumpkin pie spice
  • 1 tsp fresh ginger
  1. In a high speed blender add pitted dates, hot water and canned pumpkin. Blend for 1 minute
  2. Add heavy cream/coconut milk, vanilla, cinnamon, pumpkin pie spice, and fresh ginger. Blend for 1 minute.
  3. Pour the popsicle mix into your favorite popsicle molds.
Because we might not have the same popsicle molds and therefore more or less batter mix may be needed - first measure your popsicle molds. Add water to one of the molds and then pour the water from the mold into a measuring cup. Multiply the measurement to as many pops as you have. Ex. one of my molds is ½ cup and I have 6 molds. Therefore, I'll need to make 3 cups of the popsicle mix. Adjust the recipe by adding more or less of the cream/milk.
